Veggie Pizza
Skill Level: Easy - if you can boil an egg, you can make this
Serves 8 servings

Ingredients
- 3/4 cup marinara sauce
- 1 tsp. basil pesto
- 1 (12-inch) packaged pizza crust
- 2 cups broccoli florets
- 1 1/2 cups sliced fresh button mushrooms
- 1 cup coarsely chopped fresh shiitake mushrooms
- 1 tbsp. water or chicken broth
- 1/2 tsp. freshly ground pepper
- 1/2 cup shredded part-skim mozzarella cheese
Directions
1. Preheat grill to medium (300°F to 350°F). Combine marinara sauce and pesto; spread over pizza crust, leaving a 1-inch border.
2. Coat a large nonstick skillet with cooking spray. Place broccoli, mushrooms and water in skillet; sauté over medium-high heat 5 to 7 minutes. Drain vegetables well. Spread broccoli-mushroom mixture on crust; sprinkle with pepper and top with cheese.
3. Place pizza on grill over direct heat. Cover and grill 4 to 5 minutes or until cheese melts.
