Snow Peas Stir-Fry

Serves 4 servings

Ingredients
- 2 tsp. toasted sesame oil
- 2 cups sliced fresh snow peas
- 1 cup thinly sliced carrots
- 1 cup sliced mushrooms
- 1/2 cup green onion, thinly sliced, divided
- 1 tbsp. light soy sauce
- 8 oz. rice noodles or other Asian noodles (2 cups), cooked
- Sesame seeds (optional)
Directions
1. Coat a nonstick wok or skillet with sesame oil. Place over high heat 1 minute.
2. Add snow peas, carrots, mushrooms and 1/4 cup of the green onion. Stir-fry over high heat until vegetables are crisp-tender.
3. Add soy sauce and cooked noodles. Toss 1 to 2 minutes or until heated. Top with remaining 1/4 cup green onion. Sprinkle with sesame seeds, if desired. Serve immediately.
