Gluten-Free Cinnamon–Raisin Bread

Ingredients
1/4 cup vegetable oil
1/4 cup packed brown sugar
1 large egg
1 1/4 cups brown rice flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. ground cinnamon
1/2 cup raisins, rehydrated†
1/2 cup milk
1/4 cup applesauce
1/2 cup finely chopped pecans
Directions
- Preheat oven to 350°F. Coat a 9x5x3-inch bread pan with nonstick cooking spray. For the batter, in a medium bowl and using a wooden spoon, stir together oil and sugar. Stir in egg.
- Add flour, baking soda, baking powder and cinnamon. Stir to incorporate (do not overmix). Stir in raisins, milk, applesauce and pecans.
- Pour batter into bread pan. Bake 35 to 40 minutes. Let cool in pan. Remove bread from pan, slice and serve.
